Where can I view all the customization options available for a chatbot built on Haptik? We'd like to change the look and feel of the IVA.

This is possible on the Business Manager (Conversation Studio > Business Manager). 
Once on the business manager, most of these changes are part of SDK configuration found under Channels

For very specific changes in the look and feel, custom CSS injector to SDK is possible.
